Edibe Menemen

Two servings. Cooking time: 10 minutes.
Ingredients
- 1 small onion
- 1 organic green pepper
- 1 tomato
- ½ tablespoon butter
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 matchbox size Feta cheese
- 5 sprigs of parsley
- 2 slices of pastrami
- One pinch of red pepper flakes
Preparation
1. Chop the onion and fry in butter.
2. Add the tomatoes and green peppers you cut into small pieces. Add the beaten eggs to another bowl before the tomatoes have drained. Add the salt and black pepper.
3. Cook the eggs until they are slightly watery and add the feta.
4. Take the ‘menemen’ on the plate you will serve, sprinkle chili pepper and parsley on it.
5. Finally, add the pastrami and serve.
